Your suggestion for a "parameterisation" of conjugacy class and centralizer
orders, along with a list of character degrees would be a great start and most
useful.

This is correct, the table for E6(2) goes back to B.Fischer and the
tables
for E7(2) and E8(2) are not known.What I could provide relatively easily (if this was of any help) is
a
"parameterization" of conjugacy classes and centralizer orders for
these
groups, as well as a list of (ordinary) character degrees. In principle
I
could compute more character values, but that may be a bit more
